Food in Bivouac

What do we eat in bivouac in Madagascar?

Malagasy food is among the most varied in the world. With all the cultivated land, the sale of fruits, vegetables, and rice, agriculture is a sector that provides employment for a large number of people. In Madagascar, it is easy to eat very healthily.

Rice is the national dish. There are about ten different varieties of rice, but the country's production doesn’t even meet the needs of the entire population… The Malagasy eat rice three times a day.

There is also a wide selection of fruits and vegetables, which can be easily found in the streets.

On the coast, you will enjoy the day's catch with seafood or grilled fish. In the inland regions, you’ll find various meats such as zebu (which is also part of the national dish), duck, or pork.

Vegetarians, vegans, and those on special diets are welcome. Be sure to specify this to your travel advisor when making your booking.

With Détours Madagascar, when you travel in bivouac, our guides become Top Chefs. It’s even very interesting to watch the Malagasy cook and participate. You can’t imagine how much they can prepare for you with so little.

All the utensils are transported by 4x4 or by our brave porters. A campfire, one or two pots, and it's all set. Their technique is remarkable. Rice or French fries, always accompanied by a small salad of raw vegetables. Not to mention the duck, pork, or a nice zebu steak… Often accompanied by a small sauce to spice it all up. It’s important to know that Malagasy cuisine is very flavorful. For dessert: fruits; the Malagasy love bananas. Depending on the season, it could also be mangoes, papayas, apples, or mandarins. A multitude of fresh products from Malagasy lands will allow you to spend wonderful evenings around a fire, under a perfectly starry sky.
